So we’re 14 days into January, and I’m still trying to loose the Christmas bloat. I had a wonderful and relaxing holiday filled with way too many mince pies and sneaky slices of Panattone. So if you’re like me and still struggling to get back into your skinny jeans, then I’ve got just the thing for you!
It’s no secret that the bulk of my bakes are sugary sweet treats, but I also like healthy things too. Especially smoothies. They’re the prefect way to start your day and give you an extra added boost when you need it. I’ve shared smoothies with you before that included yogurt and a load of different fruit, but not one like this. My ultimate green mojito smoothie is made up of exactly that. Ultimate raw green goodness, so it’s suitable for vegans too. Inspired by an alcoholic mojito, this mojito smoothie made with a blend of lime, mint, spinach, apple, and a banana for a little natural sweetness is my new favourite thing. It’s also got some organic wheatgrass and spirulina powders as well as some chia seeds for an extra boost. And despite the colour which some people may find a little off putting, it’s certainly doesn’t taste like that.
The beauty of a smoothie is that you can adjust the ingredients so easily to suit your own tastebuds. You really can’t screw this up! And coming in at roughly 100 calories per serving (this mojito smoothie makes two servings) it’ll get you back into your skinny jeans in no time. It’ll also help get you through the remainder of Dry January!
- 1/2 Granny Smith Apple, chopped
- 1 Banana (small to medium depending on how sweet you want it)
- 1 Cup Packed Spinach
- 10 Large Mint Leaves
- Juice of one Lime
- 1 Tbsp Chia Seeds
- 1.5 tsp Wheat Grass Powder
- 1 tsp Spirulina Powder
- 3/4 Cup (190 ml) Coconut Water
- Place all of the ingredients in a blender (I use a small hand held food processor), and puree until a well blended and no lumps remain.
- Divide between two glasses, and drink immediately.
